Kheer is a popular Indian dessert made with rice, milk, sugar, and a variety of flavorings and garnishes. Here’s a simple recipe to make kheer at home:

Ingredients:

  • 1/4 cup basmati rice
  • 1 liter (4 cups) whole milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup chopped nuts (such as almonds, cashews, and pistachios)
  • 1/4 cup raisins (optional)
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon ghee (clarified butter)
  • Saffron strands (optional, soaked in 1 tablespoon warm milk)
  • Chopped fresh fruits (optional, such as mango or banana, for garnishing)


Method:

  1. Rinse the Rice:

    • Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch and prevents the kheer from becoming too thick.
  2. Cook the Rice:

    • In a heavy-bottomed pan, heat the ghee over medium heat.
    • Add the rinsed rice to the pan and sauté for 2-3 minutes until the rice is lightly toasted and aromatic.
  3. Add Milk:

    • Gradually add the whole milk to the pan with the rice. Stir continuously to prevent the rice from sticking to the bottom of the pan.
    • Bring the milk to a boil, then reduce the heat to low and let it simmer. Cook the rice in the milk for about 20-25 minutes, stirring occasionally, until the rice is fully cooked and the milk has thickened.
  4. Add Sugar and Flavorings:

    • Once the rice is cooked and the kheer has thickened to your desired consistency, add the sugar. Stir until the sugar is completely dissolved.
    • Add the cardamom powder and saffron strands (if using). Mix well.
  5. Add Nuts and Raisins:

    • In a separate small pan, heat a little ghee and fry the chopped nuts and raisins until golden brown.
    • Add the fried nuts and raisins to the kheer. Stir to combine.
  6. Simmer and Serve:

    • Allow the kheer to simmer for an additional 5-10 minutes to let the flavors meld together.
    • Remove from heat and let it cool slightly before serving. Kheer can be served warm or chilled, depending on your preference.


  7. Garnish:

    • Garnish with additional chopped nuts or fresh fruits if desired.

Tips:

  • Consistency: The kheer will thicken further as it cools. If it becomes too thick, you can stir in a little more milk to adjust the consistency.
  • Sweetness: Adjust the amount of sugar according to your taste. You can also use jaggery or honey as a natural sweetener.
