Kheer recipie and cooking method
Kheer is a popular Indian dessert made with rice, milk, sugar, and a variety of flavorings and garnishes. Here’s a simple recipe to make kheer at home:
Ingredients:
- 1/4 cup basmati rice
- 1 liter (4 cups) whole milk
- 1/2 cup sugar (adjust to taste)
- 1/4 cup chopped nuts (such as almonds, cashews, and pistachios)
- 1/4 cup raisins (optional)
- 1/4 teaspoon cardamom powder
- 1 tablespoon ghee (clarified butter)
- Saffron strands (optional, soaked in 1 tablespoon warm milk)
- Chopped fresh fruits (optional, such as mango or banana, for garnishing)
Method:
Rinse the Rice:
- Rinse the basmati rice under cold water until the water runs clear. This helps remove excess starch and prevents the kheer from becoming too thick.
Cook the Rice:
- In a heavy-bottomed pan, heat the ghee over medium heat.
- Add the rinsed rice to the pan and sauté for 2-3 minutes until the rice is lightly toasted and aromatic.
Add Milk:
- Gradually add the whole milk to the pan with the rice. Stir continuously to prevent the rice from sticking to the bottom of the pan.
- Bring the milk to a boil, then reduce the heat to low and let it simmer. Cook the rice in the milk for about 20-25 minutes, stirring occasionally, until the rice is fully cooked and the milk has thickened.
Add Sugar and Flavorings:
- Once the rice is cooked and the kheer has thickened to your desired consistency, add the sugar. Stir until the sugar is completely dissolved.
- Add the cardamom powder and saffron strands (if using). Mix well.
Add Nuts and Raisins:
- In a separate small pan, heat a little ghee and fry the chopped nuts and raisins until golden brown.
- Add the fried nuts and raisins to the kheer. Stir to combine.
Simmer and Serve:
- Allow the kheer to simmer for an additional 5-10 minutes to let the flavors meld together.
- Remove from heat and let it cool slightly before serving. Kheer can be served warm or chilled, depending on your preference.
Garnish:
- Garnish with additional chopped nuts or fresh fruits if desired.
Tips:
- Consistency: The kheer will thicken further as it cools. If it becomes too thick, you can stir in a little more milk to adjust the consistency.
- Sweetness: Adjust the amount of sugar according to your taste. You can also use jaggery or honey as a natural sweetener.
