Keema Paratha Roll is a delightful and hearty dish that's popular in South Asia. It combines spiced minced meat (keema) with a soft, flaky paratha (Indian flatbread) to create a delicious roll. Here’s a recipe for you:

Ingredients:

For Keema (Spiced Minced Meat):

  • 500 grams minced meat (beef, lamb, or chicken)
  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)
  • 1/4 cup water (adjust as needed)

For Paratha:

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 2 tablespoons oil or ghee (clarified butter)
  • Water, as needed (to make the dough)

Method:

Preparing the Keema:

  1. Heat Oil: In a large pan, heat 2 tablespoons of oil over medium heat.

  2. Cook Onions: Add finely chopped onions and sauté until they become golden brown.

  3. Add Ginger-Garlic Paste: Add the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.

  4. Cook Tomatoes and Spices: Add chopped tomatoes, green chilies, turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Cook until the tomatoes break down and the oil begins to separate from the mixture.

  5. Add Minced Meat: Add the minced meat to the pan. Cook on medium heat, breaking up the meat with a spoon and stirring frequently. Cook until the meat is browned and cooked through.

  6. Simmer: Add a 1/4 cup of water (or as needed) to keep the mixture moist. Cover and cook for 10-15 minutes until the meat is tender and the flavors are well combined.

  7. Finish: Stir in the garam masala and cook for another 2-3 minutes. Garnish with chopped cilantro. Set aside.

  8. Preparing the Paratha:

  1. Mix Dough: In a large bowl, combine the whole wheat flour, salt, and oil or ghee. Gradually add water and knead to form a smooth, pliable dough. Cover and let it rest for 15-20 minutes.

  2. Roll Out Parathas: Divide the dough into equal portions. Roll each portion into a thin circle on a floured surface.

  3. Cook Parathas: Heat a tawa (griddle) or non-stick pan over medium-high heat. Cook each paratha for 1-2 minutes on each side, until brown spots appear. You can add a little oil or ghee while cooking for extra crispiness.

Assembling the Roll:

  1. Spread Keema: Place a cooked paratha on a flat surface. Spoon a generous amount of keema onto the center of the paratha.

  2. Roll and Serve: Roll the paratha tightly around the keema. You can cut the roll in half if desired. Serve hot with your choice of chutney or raita.
