Chicken Manchurian
Ingredients
For Chicken Manchurian:
- 500g boneless chicken, cut into small cubes
- 1/2 cup cornflour
- 1/2 cup all-purpose flour
- 1 egg
- 2 tbsp soy sauce
- 1 tsp ginger-garlic paste
- 1/2 tsp black pepper
- Salt, to taste
- Oil, for frying
For the Sauce:
- 2 tbsp oil
- 1 medium onion, chopped
- 1 bell pepper, chopped (red/green)
- 1-2 green chilies, chopped
- 1 tbsp ginger-garlic paste
- 2-3 tbsp soy sauce
- 2 tbsp chili sauce
- 1 tbsp tomato ketchup
- 1 tsp vinegar
- 1 tsp sugar
- Spring onions, for garnish
Chinese Fried Rice
Ingredients
- 2 cups cooked rice (preferably day-old)
- 2 tbsp oil
- 1 medium onion, finely chopped
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 2-3 tbsp soy sauce
- 1 tsp sesame oil (optional)
- 1/2 tsp black pepper
- Salt, to taste
- Spring onions, for garnish
Cooking Method
Chicken Manchurian
Marinate the Chicken:
- In a bowl, combine chicken cubes with soy sauce, ginger-garlic paste, black pepper, and salt. Let it marinate for at least 30 minutes.
Prepare the Coating:
- In another bowl, mix cornflour, all-purpose flour, and an egg. Add a little water if needed to make a batter.
Fry the Chicken:
- Heat oil in a pan. Dip each piece of marinated chicken in the batter and fry until golden and crispy. Remove and drain on paper towels.
Make the Sauce:
- In a wok, heat 2 tbsp oil. Add chopped onions, bell pepper, and green chilies; stir-fry for a couple of minutes.
- Add ginger-garlic paste, soy sauce, chili sauce, ketchup, vinegar, and sugar. Mix well and cook for 2-3 minutes.
- Add the fried chicken pieces, toss to coat in the sauce, and cook for another minute.
Garnish:
- Garnish with chopped spring onions.
Chinese Fried Rice
Prepare the Rice:
- If using freshly cooked rice, let it cool completely to avoid mushiness.
Stir-Fry the Vegetables:
- In a large wok or pan, heat oil. Add chopped onions and sauté until translucent.
- Add mixed vegetables and stir-fry for 3-4 minutes.
Add Rice and Season:
- Add the cooked rice, soy sauce, sesame oil, black pepper, and salt. Toss everything together until well mixed and heated through.
Garnish:
- Garnish with spring onions.
Serve
