Gulab Jaman Recipe and cooking method
Here's a delicious recipe for Gulab Jamun, a popular Indian sweet made from khoya (dried milk) and soaked in sugar syrup.
Ingredients
For the Gulab Jamun:
- 1 cup khoya (mawa)
- ¼ cup all-purpose flour (maida)
- ¼ teaspoon baking powder
- 1-2 tablespoons milk (as needed)
- Oil or ghee (for deep frying)
For the Sugar Syrup:
- 1 cup sugar
- 1 cup water
- 2-3 cardamom pods (crushed)
- 1 teaspoon rose water (optional)
- A few drops of lemon juice (to prevent crystallization)
Instructions
Prepare the Sugar Syrup:
- In a saucepan, combine the sugar, water, and crushed cardamom pods.
- Bring to a boil, stirring until the sugar dissolves.
- Add the lemon juice and reduce the heat. Let it simmer for about 5-7 minutes until slightly thickened.
- Remove from heat and stir in the rose water if using. Set aside to cool.
Make the Gulab Jamun:
- In a mixing bowl, crumble the khoya and add all-purpose flour and baking powder.
- Mix well, adding milk gradually to form a smooth dough. The dough should be soft but not sticky.
- Divide the dough into small portions (about the size of a marble) and roll them into smooth balls. Make sure there are no cracks.
- Heat oil or ghee in a deep frying pan over medium heat. To check if the oil is ready, drop a small piece of dough in; it should rise to the surface slowly.
- Carefully add the rolled balls to the hot oil, a few at a time. Fry until they turn golden brown, turning gently for even cooking.
- Once fried, remove the balls and drain on paper towels.
Soak in Sugar Syrup:
- Allow the fried Gulab Jamun to cool for a few minutes, then transfer them to the warm sugar syrup.
- Let them soak for at least 30 minutes to absorb the syrup.
Serving:
Serve warm or at room temperature, garnished with chopped nuts or a sprinkle of cardamom powder if desired. Enjoy your homemade Gulab Jamun!
