Here's a delicious recipe for Gulab Jamun, a popular Indian sweet made from khoya (dried milk) and soaked in sugar syrup.

Ingredients

For the Gulab Jamun:

  • 1 cup khoya (mawa)
  • ¼ cup all-purpose flour (maida)
  • ¼ teaspoon baking powder
  • 1-2 tablespoons milk (as needed)
  • Oil or ghee (for deep frying)

For the Sugar Syrup:

  • 1 cup sugar
  • 1 cup water
  • 2-3 cardamom pods (crushed)
  • 1 teaspoon rose water (optional)
  • A few drops of lemon juice (to prevent crystallization)

Instructions

Prepare the Sugar Syrup:

  1. In a saucepan, combine the sugar, water, and crushed cardamom pods.
  2. Bring to a boil, stirring until the sugar dissolves.
  3. Add the lemon juice and reduce the heat. Let it simmer for about 5-7 minutes until slightly thickened.
  4. Remove from heat and stir in the rose water if using. Set aside to cool.

Make the Gulab Jamun:

  1. In a mixing bowl, crumble the khoya and add all-purpose flour and baking powder.
  2. Mix well, adding milk gradually to form a smooth dough. The dough should be soft but not sticky.
  3. Divide the dough into small portions (about the size of a marble) and roll them into smooth balls. Make sure there are no cracks.
  4. Heat oil or ghee in a deep frying pan over medium heat. To check if the oil is ready, drop a small piece of dough in; it should rise to the surface slowly.
  5. Carefully add the rolled balls to the hot oil, a few at a time. Fry until they turn golden brown, turning gently for even cooking.
  6. Once fried, remove the balls and drain on paper towels.

Soak in Sugar Syrup:

  1. Allow the fried Gulab Jamun to cool for a few minutes, then transfer them to the warm sugar syrup.
  2. Let them soak for at least 30 minutes to absorb the syrup.

Serving:

Serve warm or at room temperature, garnished with chopped nuts or a sprinkle of cardamom powder if desired. Enjoy your homemade Gulab Jamun!
