Ingredients:

  • For the Kebabs:
    • 500 grams minced meat (beef or lamb)
    • 1/2 cup chana dal (split chickpeas)
    • 1 large onion, finely chopped
    • 2-3 green chilies, finely chopped (adjust to taste)
    • 2 tablespoons ginger-garlic paste
    • 1 teaspoon cumin seeds
    • 1 teaspoon coriander seeds
    • 1 teaspoon fennel seeds
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon red chili powder
    • 1/2 teaspoon turmeric powder
    • 1 teaspoon garam masala
    • Salt to taste
    • 2 tablespoons chopped fresh coriander leaves
    • 1 egg (optional, for binding)
    • Oil for frying


For Garnish:

  • Sliced onions
  • Lemon wedges
  • Fresh coriander leaves


Instructions:

  1. Cook the Lentils:

    • Wash the chana dal and cook it with enough water until it's soft. Drain and set aside.
  2. Prepare the Meat Mixture:

    • In a pan, dry roast the cumin seeds, coriander seeds, and fennel seeds until they release their aroma. Let them cool and then grind into a fine powder.
    • In a large mixing bowl, combine the minced meat, cooked chana dal, chopped onions, green chilies, ginger-garlic paste, roasted spice powder, black pepper, red chili powder, turmeric powder, garam masala, and salt. Mix well.
    • You can use a food processor to blend this mixture into a smooth paste. This makes the kebabs easier to shape and more flavorful.


  3. Form the Kebabs:

    • If the mixture is too dry, you can add an egg to help bind it together.
    • Shape the mixture into small, flat patties or discs.
  4. Cook the Kebabs:

    • Heat oil in a frying pan over medium heat.
    • Fry the kebabs in batches until they are golden brown and cooked through, about 3-4 minutes on each side.
  5. Serve:

    • Garnish with sliced onions, lemon wedges, and fresh coriander leaves.
    • Serve hot with naan, paratha, or as a part of a larger meal.
