  • Potatoes: 1 large, boiled and diced
  • Onions: 1 medium, finely chopped
  • Tomatoes: 1 medium, finely chopped
  • Cucumber: 1/2 medium, finely chopped
  • Coriander Leaves: A handful, chopped
  • Pomegranate Seeds: Optional, for garnish
  • Chopped Green Chilies: 1-2 (optional, for extra heat)
  • For the Chutneys:

    • Tamarind Chutney:

      • Tamarind paste: 2 tbsp
      • Jaggery or sugar: 2 tbsp (adjust to taste)
      • Water: 1/2 cup
      • Roasted cumin powder: 1/2 tsp
      • Black salt: 1/4 tsp
    • Green Chutney:

      • Fresh coriander leaves: 1 cup
      • Fresh mint leaves: 1/2 cup
      • Green chilies: 1-2 (adjust to taste)
        • Lemon juice: 1 tbsp
        • Salt: to taste
      • Instructions:

        1. Prepare the Chutneys:

          • Tamarind Chutney: In a small saucepan, combine tamarind paste, jaggery (or sugar), and water. Cook over medium heat until the mixture thickens slightly. Stir in roasted cumin powder and black salt. Set aside to cool.
          • Green Chutney: In a blender, combine coriander leaves, mint leaves, green chilies, lemon juice, and salt. Blend until smooth. You can add a little water if needed to get the desired consistency.
          • Assemble the Bhel Puri:

            • In a large mixing bowl, combine puffed rice, sev, diced potatoes, onions, tomatoes, cucumber, and chopped green chilies (if using).
            • Add the tamarind chutney and green chutney to the mixture. Stir well to coat all the ingredients with the chutneys.
            • Adjust salt and spices according to your taste.
          • Serve:

            • Garnish with coriander leaves, pomegranate seeds (if using), and extra sev on top.
