Tawa Chicken is a popular Indian dish known for its flavorful and spicy taste. The name "Tawa" refers to the flat, round griddle used in Indian cooking, which is often used for frying or cooking various dishes. Here's a simple recipe to make Tawa Chicken:

Ingredients

  • Chicken: 500 grams, boneless and cut into bite-sized pieces
  • Yogurt: 1/2 cup
  • Lemon Juice: 1 tablespoon
  • Ginger-Garlic Paste: 1 tablespoon
  • Red Chili Powder: 1 teaspoon (adjust to taste)
  • Turmeric Powder: 1/2 teaspoon
  • Coriander Powder: 1 teaspoon
  • Cumin Powder: 1/2 teaspoon
  • Garam Masala: 1/2 teaspoon
  • Salt: To taste
  • Oil: 2-3 tablespoons
  • Onion: 1 large, finely chopped
  • Tomato: 1 large, finely chopped
  • Green Chilies: 2-3, slit lengthwise
  • Coriander Leaves: A handful, chopped (for garnish)
  • Kasuri Methi (dried fenugreek leaves): 1 teaspoon (optional)


Marinade

  1. In a bowl, mix the yogurt, lemon juice, ginger-garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, and salt.
  2. Add the chicken pieces to the marinade, ensuring they are well-coated.
  3. Cover and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to infuse.


Cooking Method

  1. Heat the oil in a tawa or large skillet over medium heat.

  2. Add the chopped onions to the hot oil and sauté until they become golden brown.

  3. Add the green chilies and cook for a minute.

  4. Add the marinated chicken to the skillet. Cook on medium heat, stirring occasionally, until the chicken starts to brown and the marinade thickens.

  5. Add the chopped tomatoes and mix well. Cook until the tomatoes break down and blend with the chicken, creating a rich sauce.

  6. Reduce the heat to low, cover the skillet, and let the chicken cook for about 15-20 minutes, or until it is fully cooked and tender. Stir occasionally to ensure it doesn’t stick to the bottom of the skillet.

  7. Check for seasoning and adjust salt or spices if necessary.

  8. Sprinkle kasuri methi (if using) and chopped coriander leaves on top.

  9. Serve hot, garnished with additional coriander leaves if desired. Tawa Chicken pairs well with roti, naan, or steamed rice.
