Ingredients:

For the Marinade:

  • 500 grams (about 1 pound) of fish fillets (like salmon, cod, or tilapia)
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon tandoori masala (available at Indian grocery stores or online)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika (for color)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste


For Garnishing:

  • Lemon wedges
  • Fresh cilantro or mint leaves
  • Sliced onions

Method:

  1. Prepare the Fish:

    • Clean and pat dry the fish fillets. Make a few diagonal slashes on each side of the fillets to help the marinade penetrate.
  2. Prepare the Marinade:

    • In a bowl, combine yogurt, lemon juice, vegetable oil, ginger-garlic paste, tandoori masala, ground cumin, ground coriander, paprika, turmeric powder, cayenne pepper, garam masala, and salt.
    • Mix well to form a smooth marinade.
  3. Marinate the Fish:

    • Coat the fish fillets thoroughly with the marinade. Make sure the marinade gets into the slashes you made on the fish.
    • Cover and refrigerate for at least 1 hour, preferably overnight, to let the flavors meld.


  4. Cook the Fish:

    • Grilling: Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking. Place the marinated fish fillets on the grill and cook for about 4-5 minutes per side, or until the fish is cooked through and has a nice char.
    • Oven Baking: Preheat your oven to 400°F (200°C). Place the marinated fish fillets on a baking sheet lined with parchment paper or foil. Bake for 15-20 minutes, or until the fish is cooked through and slightly charred at the edges.
    • Pan-Frying: Heat a little oil in a non-stick skillet over medium heat. Fry the fish fillets for about 4-5 minutes per side, or until golden brown and cooked through.
  5. Serve:

    • Serve the tandoori fish hot, garnished with lemon wedges, fresh cilantro or mint leaves, and sliced onions.
    • It pairs well with naan, rice, or a side salad.
