Easy Lasagna Cups

Ingredients:

  • 1 lb (450g) ground beef or Italian sausage
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jar (about 24 oz/680g) marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp dried Italian seasoning (optional)
  • Salt and pepper, to taste
  • 12-15 wonton wrappers or lasagna noodles (if using noodles, you'll need to cook and cut them into small pieces)
  • Fresh basil or parsley, chopped (for garnish, optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).

  2. Prepare the Meat Mixture:

    • In a large skillet, cook the ground beef or sausage over medium heat until browned. Break it up into small pieces as it cooks.
    • Add the chopped onion and cook until it becomes translucent.
    • Stir in the minced garlic and cook for another minute.
    • Pour in the marinara sauce and let it simmer for a few minutes. Season with salt, pepper, and Italian seasoning if desired. Remove from heat and set aside.

  3. Mix the Cheese Filling:

    • In a medium bowl, combine the ricotta cheese, 1/2 cup of the mozzarella cheese, 1/4 cup of the Parmesan cheese, and the egg. Mix until well combined.


  4. Assemble the Lasagna Cups:

    • If using wonton wrappers, gently press each wrapper into the cups of a muffin tin, forming a little cup shape. If using cooked lasagna noodles, place a piece of noodle in each cup and trim to fit if necessary.
    • Spoon a small amount of the meat sauce into each cup.
    • Add a dollop of the cheese mixture on top of the meat sauce.
    • Sprinkle a little more mozzarella and Parmesan cheese on top.
  5. Bake:

    • Place the muffin tin in the preheated oven and bake for about 15-20 minutes, or until the cheese is melted and bubbly and the edges of the wrappers are golden brown.
  6. Garnish and Serve:

    • Let the lasagna cups cool slightly before removing them from the muffin tin.
    • Garnish with fresh basil or parsley if desired.
