Tadka Daal Chawal is a quintessential comfort food in South Asian cuisine, known for its hearty flavors and nourishing qualities. This classic dish pairs steamed rice with daal (lentil curry) that is enhanced with a flavorful tempering or "tadka." It’s a staple in many households, offering both simplicity and satisfaction in every bite.

The daal, made from lentils, is simmered until tender and then brought to life with a tempering of spices. The tadka is the secret to the dish’s irresistible aroma and taste, involving a sizzling mixture of cumin seeds, garlic, ginger, and chili. Combined with the mild, fluffy rice, Tadka Daal Chawal becomes a balanced and comforting meal that’s perfect for any day of the week.

Here’s how to make it:

Recipe: Tadka Daal Chawal

Ingredients:

  • For the Daal:

    • 1 cup yellow lentils (toor dal)
    • 1 medium onion, finely chopped
    • 2 tomatoes, chopped
    • 1 teaspoon turmeric powder
    • 1 teaspoon cumin seeds
    • 1 tablespoon ginger-garlic paste
    • 2 green chilies, slit
    • 2 tablespoons oil or ghee
    • Salt to taste
    • Fresh cilantro for garnish
    • For the Tadka:

      • 1 tablespoon ghee or oil
      • 1 teaspoon cumin seeds
      • 4-5 cloves garlic, thinly sliced
      • 1-2 dried red chilies
      • 1 teaspoon mustard seeds (optional)
      • 1 pinch asafoetida (hing)
    • For the Rice:

      • 1 cup basmati rice
      • 2 cups water
      • 1 teaspoon cumin seeds
      • 1 bay leaf
      • Salt to taste
      • Instructions:

        1. Cook the Lentils: Rinse lentils and cook in a pot with turmeric powder and water until soft. Set aside.

        2. Prepare the Tadka: Heat ghee or oil in a pan. Add cumin seeds, garlic, dried chilies, mustard seeds, and asafoetida. Sauté until garlic is golden.

        3. Combine and Simmer: Add chopped onions and ginger-garlic paste to the tadka. Sauté until onions are translucent. Add chopped tomatoes and cook until soft. Mix in the cooked lentils and simmer for 10 minutes. Adjust salt and garnish with cilantro.

        4. Cook the Rice: Rinse rice. In a pot, heat oil, add cumin seeds and bay leaf, then add rice and water. Bring to a boil, then simmer covered until rice is tender and water is absorbed.

        5. Serve: Pair the daal with the steamed rice, and enjoy with a side of pickles, yogurt, or papadam.
